You need: 100g butter, 100g brown sugar, 1 egg (beaten), half tsp vanilla extract, 75g wholemeal flour, half tsp baking soda, half tsp salt, 75g rolled oats and 40g dessicated coconut.
Cream together the butter and sugar. Add the egg and vanilla. Beat in the flour, baking soda
and salt. Stir in the oats and coconut. Form into walnut-sized balls, flatten the top with your hand and place spaced apart on a lightly greased baking tray. Bake in an oven preheated to 180ºC/350ºF/Gas 4 for 10-15mins. The cookies will harden when they cool down.
(I sprinkled some flaxseed into my cookie mixture for extra goodness.)
