100g soft light brown sugar
100g self-raising flour
1tsp baking powder
100g chopped nuts (optional)
Grease and line your cake tin.
Put the butter into a mixing bowl. Add the sugar. Beat together
until smooth and creamy.
Break the eggs into a small bowl and beat well.
Add the beaten egg to the creamy mixture, a little at a time. Each time
you add some egg, beat it into the mixture.
Peel the bananas and cut them into chunks, then mash with a fork.
Stir the mashed banana into the creamy mixture.
Put a sieve over the bowl and sift the flour and baking powder into it.
Stir the flour into the mixture with a metal spoon.
Spoon the mixture into your cake tin.
Sprinkle with chopped nuts if using and bake in an oven
preheated to 190ºC/375ºF/Gas Mark 5 for about 20-25 minutes.
Press lightly on the top of the cake to test it. It should spring back up.
Leave to cool then cut into slices and enjoy!
