![]() Carrot and lemon cupcakes For 10 cakes: 140g caster sugar 110g butter 140g self-raising flour 1tsp baking powder Half tsp ground cinnamon Half tsp nutmeg Quarter tsp ground ginger 1 egg 30g raisins 1 carrot, finely grated 1 drop lemon flavouring 40ml milk Preheat the oven to 180ºC/Gas 4. Put caster sugar and butter in a bowl and mix together. Add flour, baking powder, cinnamon, nutmeg, ginger and mix well, then stir in the egg. Add the raisins, carrot and lemon flavouring and mix well. Finally, add the milk and mix until light and creamy. Spoon mixture into paper cases. Bake in preheated oven until a skewer inserted near the centre of the cakes comes out clean, about 15 minutes. Remove to cool. George finished 1st in his category in 1h45m, Miguel finished 2nd in his category in 1h38, Johanna finished 3rd in her category in 1h37 and Georgette, after having completed a mountain marathon last weekend, sauntered in comfortably in 2h02m.
