Courgettes contain anti-cancer and anti-inflammatory properties and are a great source of Vitamin A, which is good for the immune system, and Vitamin C, which protects cells from free radicals. You need: 2 wholemeal pittas, 3tbsp tomato pizza topping, 75g goat's cheese, 1 small courgette, cut into thin slices, 2 medium mushrooms, sliced, pinch of dried marjoram and ground black pepper to taste Preheat the oven to 220ºC. Place pittas on a baking sheet and crisp for one to two minutes. Top with the pizza topping, courgette and mushrooms. Crumble the cheese over the top, sprinkle with marjoram and pepper.
